Ingredients
1cupgluten-free all purpose flour blendor all-purpose, GF is not a concern
1cupold fashioned oats
1tablespoonground flax seeds
½teaspoonbaking soda
¾cupbrown sugar
5tablespoonsEarth Balanceor other plant-based butter spread
½cupsemi-sweet chocolate chipsnon-dairy
1cupcherry or raspberry jam
Instructions
Preheat oven to 375 and line 8x8 baking try with parchment paper.
Combine flour, oats, flax, baking soda, sugar and butter in the bowl of a stand mixer (or food processor) and mix or pulse until just combined and crumbly. Dough will stick together when you press in your hand. Save ¾ cups of the dough and set aside.
Press the remaining dough into the base of the prepared pan and then spread with jam.
Sprinkie reserved dough on top of jam. Sprinkle chocolate chips on top. Bake at 375 for 30 minutes or until bubbly.
Allow to cool completely on a wire rack before cuting into squares.
