Ingredients
1Tablespoonlemon juice
¾scant cupalmond milkadd to lemon juice to measure ¾ cup
½cupwhite sugar
¼cup vegan butter(I use Earth Balance)
¼cupapple sauce(or a mashed banana)
1teaspoon vanilla extract
2cupsflour
1teaspoonbaking soda
2teaspoonbaking powder
½teaspoonsalt
½ teaspooncinnamon
2applespeeled, cored and chopped
½cupbrown sugar
1tablespoonlemon juice
½teaspooncinnamon
for the glaze:
1Tablespoonlemon juice
½cupicing sugar(or more to create a thicker glaze)
pinchcinnamon
Instructions
Preheat oven to 350 degrees and line a 9x4 inch loaf pan with parchment paper
In a small bowl, add chopped apples and toss with lemon juice.
In a measuring cup add 1 tablespoon lemon juice and enough almond milk to make ¾ cup. Set aside and allow to sit for 10 minutes
In a medium bowl mix together dry ingredients: flour, baking powder, baking soda, salt and ½ teaspoon cinnamon.
In the bowl of a stand mixer, or a large bowl, cream together vegan butter and sugar and beat until light and creamy. Add apple sauce and almond milk. Beat together, it will look a bit curdled. That's okay. Add dry ingredients and mix until just blended. Remove from stand mixer.
Add ½ cup of brown sugar and ½ teaspoon of cinnamon to apples and toss to coat evenly.
In the prepared loaf pan, add about half of the batter. Top with the apple mixture. Use your hands to push batter and apples into the corners. Top with the remaining batter and the the rest of the apples. Put loaf in the oven and bake at 350 for 50-55 minutes. Or until cake tester comes out clean when inserted into the center of the loaf.
Once the loaf is mostly cool, drizzle loaf with glaze before serving. To make glaze mix together lemon juice and icing sugar and a pinch of cinnamon. This will make a thin glaze, add more icing sugar if a thicker glaze is desired. Drizzle over loaf. Serve
Notes
The apples are mixed with brown sugar and then layered inside the bread. They will get very sticky. Expect stickiness around the edges. Parchment paper is a must.When you add the applesauce to the vegan butter and sugar and then add the plant milk, the mixture will look almost curdled. Don't worry. It's fine. Keep going.Applesauce obviously works here, adding to the apple-ly-ness of the bread, but mashed banana would also work. A ¼ cup -- this is about half a banana. Use a cake tester ( a toothpick works!) inserted into the center of the loaf. Check at 45 minutes, and see if the toothpick comes out clean. If not, bake some more. In addition to the toothpick test, the top of the loaf will have a springiness to it, when it is fully cooked through.
