Ingredients
⅓cuplarge flake oats
1-¾cupsnon-dairy milkI used coconut
2cupspureed pure pumpkin
¼cupbrown sugar
2tablespooncanola or other vegetable oil
1teaspoonvanilla
2-½cupsall purpose whole wheat flouror a combination of whole wheat and white flour
1tablespoonbaking powder
2teaspoonpumpkin pie spice
¾teaspoonbaking soda
½teaspoonsalt
for the pumpkin pie spice mix:
3tablespoonsground cinnamon
2teaspoonsground ginger
1teaspoonground nutmeg
1 teaspoonground cloves
1teaspoon ground allspice
Instructions
Add oats to a blender and pulse until finely ground into a powder. Add milk, pumpkin, sugar, oil and vanilla and blend until smooth.
In a bowl mix together dry ingredients - flour through salt.
Add pumpkin mixture to the dry ingredients and stir gently until just combined. Let rest 10-15 minutes and heat up the waffle iron.
Heat waffle iron and, depending on size of waffle iron, using a ¼ cup - ⅓ cup scoop add batter to center of waffle iron. Close lid and cook until golden brown and crisp.
