Apple Pie Bread

This bread tastes just like an apple fritter. It's vegan

  • 1 Tablespoon lemon juice
  • 3/4 scant cup almond milk add to lemon juice to measure 3/4 cup
  • 1/2 cup white sugar
  • 1/4 cup vegan butter (I use Earth Balance)
  • 1/4 cup apple sauce (or a mashed banana)
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 apples peeled, cored and chopped
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon

for the glaze:

  • 1 Tablespoon lemon juice
  • 1/2 cup icing sugar (or more to create a thicker glaze)
  • pinch cinnamon


  • Preheat oven to 350 degrees and line a 9x4 inch loaf pan with parchment paper
  • In a small bowl, add chopped apples and toss with lemon juice.
  • In a measuring cup add 1 tablespoon lemon juice and enough almond milk to make 3/4 cup. Set aside and allow to sit for 10 minutes
  • In a medium bowl mix together dry ingredients: flour, baking powder, baking soda, salt and 1/2 teaspoon cinnamon.
  • In the bowl of a stand mixer, or a large bowl, cream together vegan butter and sugar and beat until light and creamy. Add apple sauce and almond milk. Beat together, it will look a bit curdled. That's okay. Add dry ingredients and mix until just blended. Remove from stand mixer.
  • Add 1/2 cup of brown sugar and 1/2 teaspoon of cinnamon to apples and toss to coat evenly.
  • In the prepared loaf pan, add about half of the batter. Top with the apple mixture. Use your hands to push batter and apples into the corners. Top with the remaining batter and  the the rest of the apples. Put loaf in the oven and bake at 350 for 50-55 minutes.  Or until cake tester comes out clean when inserted into the center of the loaf.
  • Once the loaf is mostly cool, drizzle loaf with glaze before serving. To make glaze mix together lemon juice and icing sugar and a pinch of cinnamon. This will make a thin glaze, add more icing sugar if a thicker glaze is desired. Drizzle over loaf. Serve
