3.5cupsfresh strawberrieswashed and hulled
¼cupsweet onionsuch a Vidalia, roughly chopped
½cupgreen pepperroughly chopped
1small jalapeñofinely chopped
2tbspswhite balsamic vinegar
juice of one orangeabout ¼ cup of juice
¼cupof fresh cilantroroughly chopped
1tablespoonheaping tablespoon of honey
salt to tastewith just a twist of fresh pepper

Instructions
In the large bowl of your food processor fitted with the s-blade, add onion, green pepper, jalapeño and cilantro. Secure lid on processor and pulse 2-3 times. Add strawberries and pulse 2-3 times. Add vinegar, orange juice and honey, salt and pepper. Pulse to mix. check for seasoning, add a pinch or two of salt if necessary.Salsa benefits from an hour or two sit in the fridge.

Notes
For best flavour, let this salsa sit in the fridge for an hour or two before serving. This helps the flavours meld. Serve with corn chips.
