And when the strawberries are ready, you make salsa. No? Not you? You should try it. It's pretty awesome.
Fruit salsas are a special summer-only treat. And this strawberry salsa is one of my favorites. Fresh, sweet, spicy - this strawberry salsa recipe is my go-to when I have an abundance of juicy and ripe berries.
You could serve this salsa at a party and play a game - the "Guess What's in the Salsa" game. I promise your guests will marvel at the color and wonder what you put in there.
I can only describe this strawberry salsa as fresh. Surprisingly not sweet. And surprisingly addictive. Of course, you could add more sweetener if you wanted a sweeter salsa. You could also add more jalapeño if you wanted to go that way.
Personally, I like this salsa on the not-too-sweet side. White balsamic adds a nice level of tang. The bit of honey here is just enough to highlight the strawberry flavour without making this too sweet. Add too much and you may end up with a strawberry jam gone wrong.
Serving
Obviously, serve this salsa as you would any other salsa, with tortilla chips!
I especially like shrimp or fish tacos.
I've been using this salsa on my salads all week instead of salad dressing.

How to make fresh strawberry salsa
This is a no-cook recipe!
I find the best texture with my food processor. And the food processor makes quick work of all the chopping.
In the large bowl of your food processor fitted with the S-blade, add onion, green pepper, jalapeño, and cilantro. Pulse 2-3 times. You want to finely chop these ingredients, and if you add the soft, ripe strawberries too soon, you will end up with soup. So get these crunchier ingredients going first.
Then add berries. Plus 2-3 times.
Add vinegar, orange juice, honey and salt. Fresh cracked black peppers. Give it a quick stir and check for seasoning. Add a bit more salt if necessary.
That's it!
I think this strawberry salsa tastes better after it chills for an hour our two. So make a batch ahead of time. Then serve with chips.

Ingredients for Strawberry Salsa
Strawberries of course! This is a good recipe in the mid-summer when berries are plentiful and sweet.
Sweet Vidalia Onion. Or any other mild, sweet white onion. Red onion and cooking onions would be too strong here and overpower the berries.
Green Pepper. Adds a pop of color and some savouriness to this otherwise sweet salsa.
Jalapeno. I used just one. If you prefer less spice, just use half. I do not use the seeds here.
Cilantro. For me, cilantro is essential for salsa.
White Balsamic Vinegar. A mild, sweet vinegar that adds a nice tang to balance the berries' sweetness. A good quality balsamic is almost syrupy. You could use regular balsamic, which has a slightly stronger flavor and may add a slightly darker color to your salsa.
Orange Juice. I used fresh-squeezed juice from one large navel orange. About a ¼ cup of juice. While I do prefer fresh-squeezed in this recipe, use bottled orange juice in a pinch.
Honey. For a touch of sweetness. Be careful not to overdo it, sweeter is not better.

Fresh Strawberry Salsa
Ingredients
- 3.5 cups fresh strawberries washed and hulled
- ¼ cup sweet onion such a Vidalia, roughly chopped
- ½ cup green pepper roughly chopped
- 1 small jalapeño finely chopped
- 2 tbsps white balsamic vinegar
- juice of one orange about ¼ cup of juice
- ¼ cup of fresh cilantro roughly chopped
- 1 tablespoon heaping tablespoon of honey
- salt to taste with just a twist of fresh pepper
Instructions

Add vinegar, orange juice and honey, salt and pepper. i'm a big fan of sweet with heat combos. You can control the sweetness with the honey... even with just the one tablespoon of honey it is not as sweet as you would think it would be
